The workflow is generally the same, with the exception of some loading of plugs etc. Can you use 3rd party plugins etc with UA interfaces ? Yes you can, but they cannot be loaded into the DSP. Meaning they ONLY work with registered UA hardware that supports them. How many you can do this with depends on the gear you have. You load plugins into the DSP and It takes the load off your CPU.

The beauty of the UA system lies in it’s DSP system. Does that mean they are better than everything else ? No. And those who own and use UA interfaces love them. Opting to go the UA route means adopting a completely different system. It would take a lot of convincing to me to say it's not a great product. Last year one of the albums I did all on the Apollo was a Billboard Top 10 Hard Rock and Top 40 Rock. In the end I'm a believer and it's much more cost effective. I print them right out of their Console app, which is a layer between your recording source and your DAW. The flexibility is great if I want to track vocals through a 1073 > 1176 and guitars through an API DBX160. I rarely track things using external preamps these days, since their Unison functionality really is great! It's not different than going to a studio that has say a so-so Neve and a great Neve 1073 to track through, so you can't really say one is that much better than hardware. You just have to figure out based on your systems power how much you can run concurrently at the sample rate your session is at. Yes the plugins are IMHO better than most and only use others to save UAD DSP when I feel they give me the same thing and let those use the computer DSP power.
